Star chef Sergio Hermann, 51, continues to build his empire in Antwerp. At the end of this year he will open a new branch of his food bar Cadzand Blueness in Lange Gasthuisstraat. Seventeen years later, Verso Café opens the way for the concept of Chef Zeeland.

This year, Sergio Hermann will open a new business in the center of Antwerp. Just last summer, Le Pristine opened on the Lange Gasthuisstraat, which has already received a Michelin star. Now he is not looking much further. The new business should open by December right next door to Le Pristine. Hermann settles down with Blueness.

Blueness is already a concept well known to the Dutch chef among our northern neighbours. It’s a Japanese-inspired food bar located in the Strandhotel in Cadzand, where Herman also has the Pure C restaurant. In Blueness in the Netherlands, guests can come and have a drink, but there’s also an open kitchen and separate room for private dinners.

Antwerp Blueness is located on the premises at Lange Gasthuisstraat where Verso Café has been located for seventeen years, a subsidiary of the Dheedene family. Sergio Hermann actually works with that family at Le Pristine. “Seventeen years later, it’s time for a change. Le Pristine’s collaboration with Sergio Herman is going very well, so we didn’t hesitate to work with him again for new work. The Verso Café concept will stop at this location, but the fashion store will stay on the premises. That way. , the fusion between fashion and food is preserved. Adjacent to a five star hotel

It is no coincidence that Sergio Lange chose Gasthuisstraat, according to Dheedene. “The street is making huge leaps in terms of cooking. In the meantime, we are also looking forward to the arrival of our new neighbors on the street of the new Botanic Sanctuary Antwerp Hotel. This opens up new opportunities for the neighborhood.”

The Botanic Sanctuary Antwerp will be Antwerp’s first five-star hotel, featuring 108 different rooms and suites and opening its doors this year.

Bleuness will be Sergio Hermann’s third act in Antwerp. At the end of this year he will have Le Pristine, Bleubar and Frites Atelier at Lange Gasthuisstraat in Antwerp. In May last year, the chef announced that he was leaving his star restaurant, The Jane. In the meantime, Nick Brill will continue with The Jane. In the Netherlands, Hermann still has Pure C, AIRrepublic and Blueness, all in Cadzand.
